A luxuriously smooth, melt-in-the-mouth fudge that captures the deep, roasted essence of peanut butter without the sugar crash. This no-bake treat uses a base of rich butter and cream cheese, sweetened with erythritol and enhanced with a touch of vanilla, resulting in a dense, velvety confection that satisfies even the most intense sweet cravings.
Equipment
- Square 8×8 inch baking tin
- Parchment paper
- Large mixing bowl
- Spatula
- Small saucepan or microwave-safe bowl
Ingredients
- 250 g Smooth peanut butter 100% nuts, no added sugar
- 115 g Unsalted butter
- 100 g Cream cheese full fat
- 120 g Powdered Erythritol/Stevia blend
- 1 tsp Vanilla extract
- ¼ tsp sea salt
Instructions
- Line an 8×8 inch square baking tin with parchment paper, leaving some overhang on the sides for easy removal.
- In a large microwave-safe bowl (or a saucepan over low heat), combine the butter and peanut butter.
- Heat until completely melted and smooth, stirring frequently to prevent scorching.
- Stir in the softened cream cheese and vanilla extract. Use a whisk if necessary to ensure there are no lumps and the mixture is glossy.
- Sift in the powdered sweetener and salt. Fold in gently until the sweetener is fully incorporated and the mixture thickens slightly.
- Pour the mixture into the prepared tin and smooth the top with a spatula.
- Optional: Sprinkle a few extra grains of sea salt over the top for a “salted peanut” finish.
- Place in the refrigerator and chill for at least 2 hours, or until completely firm.
- Lift the fudge out using the parchment paper and cut into 16 even squares using a sharp knife.
- Store in an airtight container in the fridge or freezer to maintain the perfect fudge texture.
Notes
Why This Works for Keto
Peanut butter fudge is traditionally a high-sugar food, but by swapping corn syrup and granulated sugar for a powdered keto-friendly sweetener, we transform it into a metabolic powerhouse. The combination of peanut butter and cream cheese provides a dense matrix of healthy fats and moderate protein. This structure is excellent for keto because fats provide a slow-burning, stable energy source, preventing the insulin spikes associated with traditional confectionery. The inclusion of sea salt and high-quality butter provides essential electrolytes and butyrate, which supports gut health. Because this fudge is exceptionally satiating, a single square is often enough to satisfy a “sweet tooth,” making it a powerful tool for portion control and staying on track with your macronutrient goals. It’s a perfect high-fat snack for those days when you need a quick energy boost without any risk of being kicked out of ketosis.Full Ingredients + Nutrition Table
